The long, lazy days of summer have arrived, and around here we like to make the most of the sunshine. We shorten our work hours, we keep weekends for family time, and we soak up all the warmth we can before the cold returns. One of our favorite ways to appreciate the summer weather is to meet up with friends at one of our many local parks for a day of good food, good company, and some time in the great outdoors. Today we share some gems we’ve rounded up. Here are some perfect summer picnic recipes, with something that everyone can enjoy no matter their dietary needs.
These yummy fresh rolls from Sally’s Baking Addiction travel beautifully and are a great gluten free option. You can make them vegan, or add a diced protein of your choice. If you have anyone with a peanut allergy, consider a sweet chili sauce for dipping instead.
I can’t even look at these antipasto skewers from Baker By Nature without drooling. These are a great low carb option, and can easily be made vegetarian by skipping the salami, or vegan by subbing the animal proteins with extra artichoke hearts and roasted red peppers.
These gorgeous Mediterranean Pinwheels from Contentedness Cooking are vegan and gluten free. Vegan friends, you should have a look around this beautiful site. Everything looks delicious!
This fiber-rich lentil salad from Kayln’s Kitchen is the perfect picnic side dish. Look at all of the beautiful color and texture. Make this vegan salad lower carb by reducing the amount of lentils and upping your chopped veggies.
Can you tell I have a thing for food on a stick in the summer time? Skinny Kitchen is an awesome resource for low carb recipes and I just love this salad on a stick idea. I realized it’s a lot like the antipasto skewers, but consider this inspiration, and create your own salad on a stick ideas!
If you’ve been here before, you know how much I love Sugar Free Mom. How adorable are these bunless cheesburger bites? My toddler would inhale these, stick and all, if we let him.
And now for a sweet finish. These beautiful low carb lemon bars are sugar and gluten free.
What is prettier with a side of summer fresh fruit than a lovely chia pudding?
